Aquatic animals create nutrient rich water while plants thrive and purify it. Biodiversity increases nutrient quality and water is recycled naturally. Nobody does it better than nature.

Fish - the kings of the UMAMI ecosystem.
Fish are used in an aquaponics system to release nutrients into the process water. The fish are fed and their excrement ends up in the water. In the Umami ecosystem, the fish take on the additional task of reducing algae growth and mixing the water and tank bottom. They also eat plant matter that hangs in the water, keeping nutrients in the system.

Analogous to a natural ecosystem, we at Umami use a whole range of organisms to keep the system clean. Shrimp and snails eat food debris from the substrate, constantly mixing it. This helps avoid anaerobic zones and ensures efficient nitrification.

Mussels filter their food out of the water, reducing the amount of suspended solids in the water. This contributes to clear water and stable water values.

Bacteria - the fertiliser factory
Bacteria connect the two kingdoms of animals and plants. Without them, no ecosystem would function. The bacteria metabolize the ammonium excreted by the animals into nitrite and nitrate, which the plant can absorb and needs for its growth.

Plants absorb dissolved nutrients from the water and convert them to plant tissue with the help of photosynthesis. In this way, they naturally cleanse the water of nutrient compounds that have a toxic effect on aquatic animals if the concentration is too high.

Microgreens grow in the nutrient-rich waters of our ecosystem. From an ecological perspective, they take on the same role within the system as plants do in the biological filter. They take the end products of the many processes taking place and turn them into pure flavorful power for your plate.
