Microgreen-Yuzu Smash with Turicum Gin
INGREDIENTS (for one drink):
- 1 packet UMAMI Proteinmix (pea microgreens only)
- 2 cl Turicum Gin (alternatively non-alcoholic gin)
- 1 cl lime juice
- 1 cl yuzu juice (instead of yuzu, you can also use 1 cl lime juice)
- 2 cl sugar syrup
- 2 dashes Angostura Bitters
- Ice
PREPARATION:

Empty out the UMAMI Proteinmix and discard the pea microgreens (green with threads at the top). The remaining greens can be used in a salad, sandwich or as a topping for other dishes.

Set aside a few pea microgreens as a garnish for the drink. Chop the rest with a knife and crush in a mortar.

Add the sugar syrup and mix well. Press the whole mixture through a sieve and pour into a cocktail shaker filled with ice. Add the gin, lemon juice and a dash of Angostura Bitters.

Shake well.

Fill a glass with ice and pour the contents of the cocktail shaker into the glass. Add the remaining pea microgreens as garnish, and a final dash of Angostura Bitters.
